Super Fluffy Pancakes

What better way to wake up than to have some of these delicious and super fluffy pancakes that are sure to make your morning special!

 

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup milk (whole milk or 2% milk)
  • 1 large egg
  • 2 tablespoons cannabutter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

  2. In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. It's okay if there are some lumps; overmixing can lead to dense pancakes.

  4. Let the pancake batter rest for about 5 minutes. This resting time allows the leavening agents to work their magic and results in fluffier pancakes.

  5. Preheat a non-stick skillet or griddle over medium heat. If you're using a skillet or griddle that tends to stick, lightly grease it with butter or cooking spray.

  6. Once the skillet or griddle is hot, pour 1/4 cup of pancake batter onto it for each pancake. You can make them larger or smaller depending on your preference.

  7. Cook the pancakes for 2-3 minutes on the first side until bubbles start to form on the surface.

  8. Carefully flip the pancakes and cook for an additional 1-2 minutes on the other side until they are golden brown and cooked through.

  9. Remove the pancakes from the skillet or griddle and keep them warm on a plate covered with a clean kitchen towel while you cook the remaining batter.

  10. Serve the super fluffy pancakes warm with your favorite toppings such as maple syrup, fresh fruits, whipped cream, or chocolate chips.
